The origin of tiramisù: the story behind the dessert

Tiramisù actually comes from Treviso, an Italian city in the Veneto region. The most common breakfast for people from Treviso was eggs with coffee, which inspired them to create this coffee-scented dessert.

The word tiramisù comes from the Trevisan dialect and translates to 'pick me up' or 'lift me up,' and it's been linked to flirting since the Renaissance.

Even though its origin has been widely debated, as no one was really sure who created it, today, the culinary world recognizes Le Beccherie as its birthplace.

The story goes that the recipe was first registered by pastry chef Roberto Lolì Linguanotto in 1969. On Christmas Eve that year, this pastry chef created his definitive version of this popular Italian dessert.

What is sferamisù: our new take on tiramisù

As one of the best Italian restaurants in Barcelona, we felt it was our duty to serve an improved version of this popular Italian dessert. As innovative Italian chefs, we wanted to reinvent tiramisù, adding new textures while keeping its original essence and aroma.

The sferamisù has several layers of textures to offer a unique experience of flavors and sensations. This spherical Italian dessert is covered with a solid layer of melted dark chocolate, which adds a crunchy touch to the dessert.

The sferamisù filling is made from a mix of chocolate and mascarpone cheese with classic vanilla ice cream. All of this is complemented by the aroma of the best coffee on the market. Definitely a unique experience at an Italian restaurant in Barcelona.

How we choose the right coffee for our Italian tiramisù

Choosing the right coffee for our Italian tiramisù is super important because the final taste largely depends on it. To start, we need to think about what role coffee plays in this Italian dessert. Coffee mainly serves two big purposes:

  • Balancing the sweetness of the mascarpone cream: Italian tiramisù isn't known for being one of the sweetest desserts out there. The bitterness of the coffee creates a perfect balance between the sweetness of the mascarpone cream and its flavor. This way, you get a dessert that combines sweet flavors with intense coffee notes.

  • Adding aroma to the dish: Aroma plays a crucial role in what we eat. We perceive flavors just as much through smell as through taste, so we need to pick a coffee with pleasant aromas if we want to present a great tiramisù.

The ideal blend for a great tiramisù is a mix of coffees from India, Brazil, and Ethiopia, thanks to their bitterness. By choosing the perfect coffee, we achieve a unique flavor in our sferamisù. Come to BENZiNA and enjoy the best Italian desserts!
